Ripassato is a process by which the grapes are first dried and then pressed and fermented. This produces a denser, higher alcohol wine with distinctive raisin flavours. The wine has an intense, but very elegant aroma with notes of ripe cherries and blueberries, complemented by light spicy nuances that have arisen as a result of aging in oak barrels. On the palate is full, rich, rounded, with notes of ripe fruit, balanced acidity, soft tannins and a long, seductive finish. Valpolicella Ripasso is the perfect complement to red meat, grilled, game and cheese. Open the bottle one hour before serving at room temperature.
